Carrot Smoothie

Carrot Smoothie 

Prep Time: 5 Minutes

Makes:  1-2 Servings

This dreamy & creamy superfood smoothie is made with nutritious ingredients so you can feel good about having this “carrot cake” treat anytime of the day. It’s naturally sweet with subtle spices and decadent creaminess. Give it a try! 

Ingredients: 

  • 250 g chopped carrots, lightly steamed and cooled
  • 125 g carrot microgreens
  • 125 g frozen banana, sliced
  • 125 ml plain Greek yogurt
  • 125 ml vanilla non-dairy milk alternative (or milk of choice)
  • 65 g frozen pineapple
  • 1 date, pitted (optional for more sweetness)
  • 2 tbsp toasted walnuts or almonds
  • 1 tbsp unsweetened coconut flakes
  • 1/4 tsp cinnamon
  • 1/4 tsp almond or vanilla extract 

Instructions:

  1. Add all of the ingredients to your blender: carrots, microgreens, banana, Greek yogurt, milk, pineapple, date, nuts, coconut, cinnamon, and vanilla or almond extract.
  2. Blend until smooth.
  3. Enjoy immediately, topped with additional shredded carrots, coconut, and/or crushed nuts as desired.
