Makes: 2 Acai Bowls
What’s not to love about smoothie bowls?! They are beautiful, refreshing, sweet, and nutritious! Our red cabbage microgreens have a subtly sweet taste that pairs perfectly with berries, banana and coconut. With a flavor between chocolate and wild berries and a creamy, rich texture, acai powder is a delicious addition to your smoothie bowls! This bowl is loaded with fiber, antioxidants, and essential fatty acids.
Ingredients:

125 g of Cabbage Microgreens

1 frozen banana

250 g frozen red berries (I used frozen cherries & raspberries)

4 TBS of acai powder(You can use about 1 cup of frozen unsweetened Acai found at your local supermarket, you will just need more liquid).

175 ml almond or coconut milk (More or less to achieve creamy consistency)

125 ml plain Greek yogurt (substitute with dairy-free yogurt or more milk if preferred)
- 1/4 tsp of almond extract
Garnish:
- Toasted coconut flakes
- Fresh fruit such as peach slices, blueberries, raspberries, blackberries, strawberries, or cherries.
- Granola or toasted nuts/seeds
- Drizzle of honey
Instructions:
- Blend the milk and yogurt in a large, high-speed blender. Add the frozen fruit acai, cabbage microgreens, and almond extract. Continue to blend on low until smooth, only adding additional liquid if needed. It should be THICK and creamy, like ice cream! :D
- Divide the smoothie into two bowls and top with all your favorite toppings. Enjoy immediately!
